Maybe gut texture selection in those pictures is not extremely realistic, but they are quite appropriate for those cartoonish pictures.

It is questionable if realistic gutting would look better than 3D. Realistic guttings look kinda dull. they do not have any fat veins or connective tissue either just that real guts fold a bit different than a garden hose.
