I don't think he should really loose his calm. The whole vibe of that story so far is that they're pretty relaxed about pain and killing, even when they take revenge.
I think he should calmly decide he needs to each her a lesson and start acting up on it.
He would probably enjoy it, and be sadistic about it if anything.
I could see him loosing it to the sadistic pleasure and go overboard torturing her a bit more than he should, if anything. and maybe later apologizing for going too far, but even that, they've been both pretty unapologetic so far.
