It would probably be easier to use the 3D models I'm sourcing from koikatsu rather than to use AI to recreate them. I already export them to blender for rendering so it's really only one step away from getting them into Unity. Right now I'm doing the complete opposite by converting 3D models into 2D sprites with AI. pic related left is the 3D model render and the right is the AI generated result

There's this game called manabia (not guro)(https://www.dlsite.com/maniax/work/=/product_id/RJ321839.html) which is what I'm basing my game off of. The trailer for manabia doesn't show it too well but it has 2d sprites placed in a 3D world. The sprites will only rotate towards you once you are within a certain distance (as if to signify they notice you now). I wasn't a fan of it initially but this style really grew on me so I'm copying it for my game.
