I was thinking it more in a way that eligible girls would actually seek out becoming lab rats as that might give them several more months to, on rare occasions, years of conscious life, even if with a slaughter certificate and thus no longer considered human in any capacity. And a good chance of having a slow or/and painful death instead of the quick liberating jolt of decapitation on top.
Limbs are removed before experimentation to be sold as meat, otherwise they'll be contaminated and unusable with the rest of the body.
There isn't really a reason to remove brain from the head for the wetware idea, if you can keep the brain working on life support you can just use the whole head. It'll get increasingly unresponsive or erratic as neurons are rewired to run code, while computing gets faster.
Also, both keeping head alive without body for wetware and keeping body alive without head for dairy industry and pillows are developments directly from experimenting on live cadavers.
