It's hard to say what might be going on in the mind of another. For what little it's worth, it surely affects the way I perceive such statements. A single word changes a statement from one that is apparently intended to apply universally to a statement which more accurately reflects our intended meaning. There's no downside to that, even if most people fail to appreciate the difference.

Unfortunately there are crazy people who view women like they were a separate species and these people really do expect that generalizations about women are actually universal. It's probably best if we don't give people the mistaken impression that we think that way.

It is rare to find a person who isn't annoyed by being insulted, especially if the insult is unearned. If we label any group as being one thing or another, then many of the people in that group who doesn't match our characterization are going to be annoyed at being mischaracterized. Being male doesn't make a person immune to insults. The only way to avoid that is to make it clear that we're not talking about those people, either by saying "most" or by making it clear that we're not serious.

That's a special case. When we insult humanity, we're all in the same boat. So long as we're all stupid, we can all laugh about it. Plus it's usually pretty obvious that anyone saying that isn't serious. If we try calling a person stupid instead of calling humanity stupid, it rarely goes as pleasantly.

It would be so much better to somehow rephrase that so it doesn't seem to be saying that every female takes everything personally. There's no reason to be insulting vast numbers of people when all we have to do is say it slightly differently to more accurately represent what we mean.
